Using the method provided in the linked samples (http://www.oehive.org/node/482), is it possible to define a "Reply To" recipient ?

reply to in Simple MAPI

No I don't think it is possible to specify "reply to" in Simple MAPI. I could be wrong, but I cannot find anything at msdn.microsoft.com about it.
